Nut base feta cheese
- ¾ cup blanched almonds, softened (see step 1)
- ¾ cup raw cashews, softened (see step 1)
- ¼ cup refined coconut oil
- 2 tablespoons lemon juice
- 1 tablespoon white miso paste
- 1 tablespoon green olive brine
- 1 teaspoon dried oregano
- ½ teaspoon salt

Cashew base blue cheese
- 1 cup raw cashews
- 2 tbsp refined coconut oil, melted
- 20g apple cider vinegar
- 24g white miso paste
- 3/4 teaspoon salt
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/8 teaspoon spirulina, (for blue-green veins)

* 2025-08-31. Made with Jack. Very salty and pungent. Kids did not like it but I see how this can substitute for a really strong cheese taste

Cheese sauce (queso)
2025-02-01. Sauce Stache. Blend on high speed:
- 1 can chickpeas, drained (250g chickpeas)
- 1/4 cup veggie broth (1/4 tsp salt)
- 1/2 cup nutritional yeast
- 1 tbsp lemon juice
- 1 tbsp juice from sauerkraut
- 3 tbsp high quality olive oil
- 3 large garlic cloves
- Pinch salt
- 1/4 tsp turmeric
- 1/4 tsp xantham gum

- 12oz-1 lb (frozen) cauliflower, roasted
- 1 clove garlic
- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- Shake or 1/8 tsp ground turmeric
- 1/4 cup (59g) olive oil
- 1/2 cup (118g) water (very approx)
- 1 tomato
- 1/2 tsp (3g) ketchup
- 1-2 tbsp (15g) lemon juice
- 1 tsp salt
- A couple shakes hot sauce (tapatío)
Blend in small blender until smooth
For queso rice
- 1 large onion, chopped and sauteed in olive oil
- 1.5 cups long-grain brown rice, rinsed
- 1 cup lentils, rinsed
- 5-6 cups water
- 1/2 bunch celery, chopped
- 5 carrots, chopped
