Indian mixed lentils
Ingredients
- 1 cup mixed lentils
- 2.5-3 cups water
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1-3 roma tomatoes, diced (alternate: 2 cups mango)
- (optional) 1 serrano chile
- (optional) 1-2 cloves garlic
- (optional) 1 tbsp oil or ghee
- (optional) 3 tsp cumin seeds
- (optional) 2 tsp coriander powder
Directions
- Rinse lentils thoroughly.
- Add lentils, water, turmeric, salt, and serrano chile, if desired, to slow cooker. Cook on low for 6-8 hours.
- 10 mins before serving, add chopped tomato, cilantro, and optional ingredients if using. Can cook on low an additional hour or two if desired.
Serve with
- paratha, roti, or rice;
- yogurt or roasted plantains (can even mix in for some sweetness)
- fresh fruit or green salad (e.g. with beets, avocado, and sunflower seeds)
