Spicy pumpkin chili

1/2 cup dry red beans
1/2 cup dry black beans
1/2 cup dry white beans

2 cloves garlic
2 small onions
1 jar tostitos salsa
1/2 can pumpkin
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground allspice
1/4 tsp ground nutmeg
1 teaspoon ground cumin 1 teaspoon salt, or to taste

  1. Cook beans normally, but undercook slightly
  2. Add garlic, onions, salsa, and pumpkin and simmer for 30 minutes
  3. Add spices and continue cooking for 15 minues
Serve warm with cheese and tortilla chips. Top with green onion or cilantro if you like! Can substitute 1 can tomatoes and a bell pepper for the tostitos salsa -- we just used the salsa because it was in the cupboard. Inspired by: http://allrecipes.com/recipe/spicy-pumpkin-chili/
