Artichoke Dip

Aunt Nadine's artichoke dip

2 cans artichokes, drained and shredded
1/2 cup mayo
1/2 cup cheese (cheddar or jack)
1/4 cup parmesan cheese

Mix all ingredients and bake at 350 until hot and cheese is melted

Vegan spinach artichoke dip

180g (1 1/2 cups) raw cashews
4 cloves garlic
360g (1 1/2 cups) water
30g nutritional yeast
30g (2 tbsp) lemon, juice
1 teaspoons salt
4 cups loosely packed fresh or 1 lb frozen spinach, defeosted
(2) 14-ounce cans artichokes, drained & rinsed
Fresh ground pepper

1. Open artichoke cans, squeeze each artichoke to drain into sink as you pull apart leaves and put in 8x8 baking dish
2. Puree 120g water, garlic, lemon juice, nutritional yeast, and salt making sure there are no chunks of garlic
3. Add 120g water and the cashews and puree on low so that the cashews are not totally creamy. Mix into artichoke dish
4. Add the rest of the spinach and water and puree on low. Mix into artichoke dish
Puree all ingredients together except spinach and artichoke. Then add spinach and artichoke and pulse in the blender.

Made 2021-07-02 for lunch. Loved it but a bit too much salt. Reduced from 1.5 tsp to 1 tsp. 


2013ish no-dairy spinach artichoke dip

10 oz frozen chopped spinach, defrosted
1 can artichoke hearts (in water), coarsely separated by hand
1 onion, finely chopped and sauteed
1 clove garlic, minced and sauteed for 20 seconds
1 Tbsp olive oil
1/4 cup white beans, drained and rinsed, then pureed with 1/4 cup water
1 tbsp. lemon juice
2 tbsp. nutritional yeast flakes
possibly 1/2 tsp crushed red pepper
Freshly ground pepper
Salt
(probably not 1/4 tsp thyme, but maybe)

Spinach artichoke dip to try

12 oz thawed artichokes
10 oz chopped spinach thawed
1/4 cup plain greek yogurt
1/2 cup parmesan cheese
1 cup cottage cheese
1/2 onion, chopped
2 cloves minced garlic
2 tsp. mustard
(1/4 cup mozzarella cheese)

2021-11-23. Made this from dairy free for baby that uses vegan Mayo and avocado.
