Christmas pudding
2022 re-scaled for 3 cereal bowl puds. 1 for Christmas Eve, 1 for dad, 1 for Uncle Tony.

- 550g mixed dried fruit
- 378g figs
- 76g dried apricots
- 76g raisins
- 33g cranberries
- 1 stick (1/4lb) butter (113g)
- 225g dark brown sugar
- 115g white breadcrumbs
- 2 eggs
- 50g white flour
- 3/4 tsp baking powder
- Spices:
- 1 tsp allspice
- scant 1/2 tsp ground cinnamon
- scant 1/2 tsp grated nutmeg
- 133g marachino cherries
- 1/2 orange rind, juiced into mix
- Cream sugar and butter
- Add everything except fruit
- Stir in fruit
- Grease bowl with butter, line bottom with wax paper circle
- Steam for 6 hours
- 1.5 cups sherry, brandy, or rum
- 825 g mixed dried fruit
- 567 g = 20 oz figs
- 114 g = 4 oz dried apricots
- 114 g = 4 oz raisins
- 50 g = 2 oz (handful) cranberries
- 1.5 stick (3/8 lb) butter
- 337 g dark brown sugar
- 173 g white breadcrumbs
- 3 eggs
- 75 g white flour
- 1 tsp baking powder
- Spices:
- 1.5 tsp allspice
- scant 1/2 tsp ground cinnamon
- scant 1/2 tsp grated nutmeg
- 200 g marachino cherries
- 3/4 orange rind, juiced into mix
- Cream sugar and butter
- Add everything except fruit
- Stir in fruit
- Grease bowl with butter, line bottom with wax paper circle
- Steam for 6 hours
For 1 2-pint pud (or 2 1-pint puds). 2012 comment: it would be better to cut the recipe in half, or make 3/4 of this. As is, it makes one 1-pint pud and 3 cereal bowl puds. Sounds like Dad just threw away some leftovers from previous years, so he isn't finishing a full pint pudding by himself.
