Mom's Carrot Pineapple Bread
3 eggs
1 1/2 cup sugar
1 cup vegetable oil
3 tsp vanilla
1 cup crushed pineapple
2 cups grated carrots
3 cups flour
1 tsp salt
1 tsp baking soda
3 tsp cinnamon
1 cup nuts
Mix first 3 ingredients, then add next 6. Mix well. Fold in nuts.
Coat loaf pan with vegetable oil, lining bottom with wax paper.
Cook at least one hour (cover with foil if top browns before loaf is finished cooking)
