Pork Stuffing
2 lb ground pork1 medium onion, chopped
1/4 tsp pepper
Heaping 1/2 tsp poultry seasoning
Heaping 1 tsp Herb-Ox Chicken Instant Bouillon & Seasoning
1 1/2 c. Pepperidge Farm Herb Seasoned Stuffing Mix (blue package)
Combine pork and other ingredients except for stuffing mix in a large saucepan. Add boiling water to just cover. Cover (vented) and heat to a simmer on top of stove for 40 minutes, stirring frequently. With a pierced spoon, transfer meat to an oven-save bowl, mixing in stuffing mix along the way. Use
about 1 C of remaining liquid to moisten (when separating, should see liquid at the bottom).
Bake in oven at 350 degrees for 50 minutes to 1 hour, until a nice crust forms on top.
Squash
1 large butternut squash, cubed and peeled1/2 c. brown sugar, loosely packed
1/2 tsp cinnamon
Sprinkle nutmeg
3/4 stick butter
Combine all ingredients in a large saucepan. Pour in cold water, not quite covering. Cook until tender.
Drain most water but not all. Mash with butter.
Desserts
Pumpkin squares
4 eggs
1 cup cooking oil
1 2/3 cups sugar
1 can pumpkin (16 oz)
2 cups all- purpose flour
2 tsps baking powder
2 tsps ground cinnamon
1 tsp baking soda
Cream cheese icing
Beat eggs, sugar, oil and pumpkin until fluffy. Stir together flour, baking powder, cinnamon, salt, and soda. Add to pumpkin mixture and mix thoroughly. Spread into ungreased 15x10x1 inch baking pan. Bake at 350 for 25-30 mins. Cool. Frost.
1 package (3 oz) cream cheese, softened
1/2 cup butter, softened
1 tsp vanilla
2 cups powdered sugar
Cream the cheese and butter. Stir in vanilla. Beat in powdered sugar until smooth.
Graham cracker fudge
1 cup evaporated milk
2 cups sugar
1 stick butter
1 package (6 oz) chocolate chips
1 cup graham cracker crumbs
(1/2 cup chopped walnuts)
Dash salt
Put butter, milk, and sugar in saucepan and bring to boil. Boil 10 minutes. Add chocolate bits and cook until bits are melted. Add crumbs and nuts. Pour mixture into greased 8x8 pan and let cool.
Black bottom cupcakes
1 8 oz package cream cheese
1 unbeaten egg
1/3 cup sugar
1/4 tsp salt
Mix well with mixer
Add 1 6 oz package chocolate bits
In another bowl:
1 1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup water
1/3 cup oil
1 tbsp vinegar
1 tsp vanilla
Line muffin tins with cup wrappers. Otherwise don't grease pan
Fill 1/3 full of chocolate batter
Add 1 tsp cream cheese batter to each
Bake at 325 for 25 mins. Makes about 22 cupcakes
Apple (crumb) pie recipe
Foods Mary likes
- They all loved the sauteed squash we made

- Best egg, dip tenders in egg, cover with Italian bread crumbs (Progresso). Fry in vegetable oil in pan just for not sticking. Cut out the tendons from the tenders
- Macaroni salad, cubing red green peppers, scallion, macaroni, cucumber, Hellman's mayo from Cecile
- Used to be a marinade in sirloin tips, marinade recipe with a squeezed lemon and olive oil, garlic powder and minced garlic and dried basil (3 tbsp)
- Tuna melt. Bumble bee in water, Hellman's mayo, celery in tuna, no onions. They use wonder bread. Butter and fry in fry pan and flip. American cheese. Mary usually gets tuna provolone and onion
- Loved burger with onion on burger in past. Cheese burger. Two slices American cheese. Calise rolls in deli.
- Doesn't like hot dogs
- Mary makes a Waldorf salad from memere with chicken (roasted, cubed, celery, apples, mayo)
- Rice pilaf?? Near east. They would add bullion cube
- Claire's shrimp recipe
- They like a shrimp recipe with Ritz crackers but Mary did not
- Summer village chicken marinade I had
- Chicken tenders, pork and squash and rice, hamburger, and then steak in last year. She doesn't like whole chicken or chicken salad.

- Old clam chowder recipe from Barbara? Canned clams and bottles of clam juice, onion, celery, potatoes, half and half, flour, butter
- Corn chowder made with cream of corn with bacon but Jacques doesn't eat bacon now
