West Africa. peanut stew
Ingredients
- 1 medium red or white onion, chopped
- 1 tablespoon minced fresh ginger
- 1 tablespoon minced garlic
- 2 sweet potatoes or yams (about 1 pound), peeled and cut into thick chunks
- 2 large tomatoes, diced
- 3.5 cups water
- 1/3 cup peanut butter, chunky or smooth
- Pinch of cayenne
- 1/2 tsp. salt
- 1.5 tsp ground cumin
- ½ pound collards or kale or spinach, washed and cut into wide ribbons (or 1 6oz. bag baby spinach dumped from the bag)
- Optional
- 1 chopped red bell pepper
- 1/2 cup fresh cilantro, chopped
- 1 package quorn chunks
Directions
- Put first group of ingredients in slow cooker and cook on high for 4 hours or low for 8 hours.
- Stir in 1/4 cup peanut butter and mix well.
- Stir the rest of the ingredients until spinach has wilted.
