West Africa. peanut stew

 Ingredients

  • 1 medium red or white onion, chopped
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon minced garlic
  • 2 sweet potatoes or yams (about 1 pound), peeled and cut into thick chunks
  • 2 large tomatoes, diced
  • 3.5 cups water

  • 1/3 cup peanut butter, chunky or smooth
  • Pinch of cayenne
  • 1/2 tsp. salt
  • 1.5 tsp ground cumin
  • ½ pound collards or kale or spinach, washed and cut into wide ribbons (or 1 6oz. bag baby spinach dumped from the bag)
  • Optional
    • 1 chopped red bell pepper
    • 1/2 cup fresh cilantro, chopped
    • 1 package quorn chunks

Directions

  1. Put first group of ingredients in slow cooker and cook on high for 4 hours or low for 8 hours.
  2. Stir in 1/4 cup peanut butter and mix well.
  3. Stir the rest of the ingredients until spinach has wilted.
