Crispy tofu and orange rice (and orange "chicken" sauce)
Crispy tempeh

Cube tempeh, add 1 tbsp each maple syrup, lemon juice, soy sauce avocado oil

Crispy tofu
1 package extra firm tofu1 tbsp. olive oil
1 tbsp lemon juice
1 tbsp cornstarch
sprinkling of salt
- Preheat oven to 400
- Cut the tofu lengthwise into three "steaks." If desired, press the steaks between the palms of your hands to push out some of the water. Then cut the tofu into cubes.
- Put tofu in a bowl with olive oil, cornstarch, and any seasoning.
- Dump contents of bowl onto cookie sheet (with lip) and bake for 25-30 minutes, turning once.

Orange (asian) sauce
- 3/4 cup orange juice (can use from concentrate in freezer)
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1/4 cup (packed) brown sugar (50g)
- 1 tablespoon cornstarch
- Zest from 1 orange see note
- 1/2 teaspoon grated fresh ginger
- 2 cloves garlic minced
- (optional) 1/4 teaspoon crushed red pepper flakes

Orange rice
Ingredient list 1
3 cutie orange (try with rinds, washed)3 large garlic cloves, or 6 regular garlic cloves
1 tsp cumin seed
1/2 tsp crushed red pepper
1 tsp salt
2 onions, diced
1 cup water
Ingredient list 2
1.5 cups rice, rinsed (brown or white)2 cups water
- Put all ingredients in list 1 in blender and blend until smooth
- Put all ingredients (blended ingredients from list 1 and ingredients from list 2) in a pot. Bring to a boil and then simmer for 10 minutes.
- If desired, 3-5 minutes before rice is done, add 1 cup frozen green beans.
