Maple BBQ baked beans

1 large yellow onion, diced finely and sauteed in olive oil
4 garlic cloves (minced)
6 tablespoons (100 g) tomato paste
¼ cup brown sugar (not exact)
Splash vanilla extract
2 tablespoons apple cider vinegar
2 tablespoons soy sauce
2 tablespoon dijon mustard
2 teaspoons smoked paprika
½ teaspoon salt
3 cups (1 lb) cooked navy beans in some of their liquid
(Omitted red miso because I didn't have any)
Instructions:
- Cook dry beans (soaked overnight, 7-8m in instant pot with natural release)
- Remove from instant pot. In instant pot, saute onion in olive oil, then added garlic until fragrant.
- Add all other ingredients except beans. Do add a bit of the bean liquid. Let the ingredients dissolve and mix together until not clumpy and is fragrant.
- Add beans, simmer 20-60m.

Ingredients
▢2 Tablespoons olive oil

▢½ cup apple puree apple sauce
▢1 can tomato puree 400 grams, 14 oz
▢1 teaspoon wholegrain mustard
▢1 cup vegetable stock
▢2 cans pinto beans (drained) 800 grams, 28 oz
Instructions
1. Heat the olive oil in a large sauce pan over a medium heat. Add the onion, garlic and thyme, sauté until the onion is soft and fragrant.
2. Add the smoked paprika, cook for 1 minute
3. Add the apple sauce, tomato puree vegetable stock, mustard and drained beans.
Simmer uncovered until the sauce is thick and glossy, stirring occasionally (15-20 minutes).
Season with salt and pepper

More recent and probably better recipe. Used 1/4 cup maple sugar in place of molasses and brown sugar. Next time reduce maple syrup by 1/3?1 lb dry navy beans
