NOTE: this is my own, non-traditional take, and designed for some ease

# ingredients

cod (e.g. frozen chunks from Trader Joe's)
potatoes
onions

black olives
artichokes (non-traditional)

garlic
red pepper (non-traditional)
parsley
salt
pepper
vinegar (somewhat non-traditional)
olive oil


# instructions

boil cod to defrost it, in as little water as possible; set aside

parboil potatoes in same water

sautee onions and garlic; finish by adding potatoes, salt, pepper, red pepper

put it together in a pan: cod, potatoes, onions/garlic, artichokes

drizzle with olive oil
drizzle 1 T apple cider vinegar

bake for 20 mins at 350, halfway through adding black olives and parsley


# notes

sliced hard-boiled eggs are apparently traditional
