Baked Latkes - Potato Latkes - Low fat Recipe

Note: we have not made this yet!
  • 2-3 tsp. canola or vegetable oil, divided
  • 2-3 medium Idaho, russet, Yukon Gold or red new potatoes, peeled and chopped into 1/2" pieces
  • 1 small clove garlic
  • 1/2 tsp. thyme
  • 1 egg, lightly beaten
  • 2 tbsp. flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 medium onion, chopped
In food processor, pulse all ingredients one by one. Make fist-sized balls from mixture and place onto oiled glass baking dish. Flatten balls halfway. Drizzle with olive oil. Bake at 450 for 15 minutes each side.
