Brownies & blondies

Black bean brownies

90g water or black bean liquid
315g black beans
16g flaxseed ground
45g coconut oil
72g cocoa powder
1/4 tsp salt
1 tsp vanilla
105g sugar
1 1/2 tsp baking powder

Bake 350 for 15 min in mini muffin tins. Came out very oily, but probably because I added dark chocolate melted since we ran out of cocoa.

Blondies

Ingredients:
400g garbanzo beans
120g maple syrup
2 tsp vanilla
120g oats
60g peanuts
A few shakes of salt (if peanuts are unsalted)
About 6 squares Trader Joe's 72% dark chocolate


Instructions:
Mix all ingredients in blender, except chocolate. Stir in chocolate by hand in glass pan. Bake at 350 for 25 minutes

Pumpkin Okara brownies

This was inspired by the recipe requiring one box yellow cake mix and one can pumpkin. In an effort to make it healthier, I invented the following:

  • 1 1/2 cups whole wheat flour
  • 1 1/4 cups okara
  • 1 tsp salt
  • 1 1/2 cups sugar
  • 2 tsp. baking powder
  • 1/4 cup oil
  • 1 can pumpkin
This came from some recipe online to make a box of cake mix from scratch. Instead of whole wheat flour + okara, the original recipe called for 2 1/2 cups flour (white?).

I topped this with cream cheese. I'm pretty sure I didn't use butter -- I remember thinking perhaps it would be firmer if I had used butter. In any case, I have this written down:

  • 8 oz. cream cheese (low fat)
  • 1/2 stick butter
  • 1-2 cups powdered sugar
