Pancakes

These fluffy vegan treats are from food.com.

3/4 cup + 2 tbsp water (I'd like to try substituting 1 tbsp water with lemon juice or flavored blueberry syrup)
2 1/2 tablespoons grapeseed oil
2 1/4 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons white sugar
1/2 cup white flour
1/2 cup whole wheat flour
Mix ingredients well up to flour, then add flour and mix until just blended. Cook normally on stovetop in a skillet.


Almond flour pancakes.
▢1 cup All-Purpose Flour - (note 1)
▢1 cup Almond Flour - (note 2)
▢1 tablespoon Baking Powder
▢1 ½ cup Almond Milk - (note 3)
▢2 teaspoons Apple Cider Vinegar - (note 4)
▢2 tablespoons Olive Oil - (note 5)
▢2 tablespoons Maple Syrup - (note 6)
▢1 teaspoon Vanilla Extract
▢¼ teaspoon Salt

Pumpkin Paleo pancakes from NYT also looked good. I'd like to try them with the substitution of a banana for the sugar.
