Whiskey Red Beans
Ingredients:
1 cup dry red beans, soaked and cooked
2/3 cup uncooked rice (white or brown, though cooking time reflects white)
1 large onion
1 lb. frozen bell peppers
1/2 c. whiskey
Olive oil
Salt and Tabasco sauce to taste
Directions:

1/2 c. whiskey

Salt and Tabasco sauce to taste
Directions:
- Sliver onions and saute in olive oil until lightly brown in some spots
- Add whiskey and cook until reduced
- Add red bean cooking liquid (at least 1 1/3 cups) and rice
- Cook rice normally
- When rice is nearly cooked, add bell peppers and red beans. Cook until heated.
- Season to taste with salt and Tabasco
