Whiskey Red Beans

Ingredients:

1 cup dry red beans, soaked and cooked
2/3 cup uncooked rice (white or brown, though cooking time reflects white)
1 large onion
1 lb. frozen bell peppers
1/2 c. whiskey
Olive oil
Salt and Tabasco sauce to taste

Directions:
  1. Sliver onions and saute in olive oil until lightly brown in some spots
  2. Add whiskey and cook until reduced
  3. Add red bean cooking liquid (at least 1 1/3 cups) and rice
  4. Cook rice normally
  5. When rice is nearly cooked, add bell peppers and red beans. Cook until heated.
  6. Season to taste with salt and Tabasco
