Vegan soda bread
1/4 cup cashews pureed in 2 tbsp apple cider vinegar and enough water to total 2 cups (let sit 10m to ferment to buttermilk)
360g white flour
90g oats
1.5 tsp baking soda
0.5 tsp salt
Divide into 5 circular balls to each be a loaf. Place on parchment paper on baking sheet. Bake at 375 for about 30-40m.
2026-03-15. Made for Brunelles. For half the batch added cranberries but no sugar. Clara loved this. For the other half I added both cranberries and added sugar (about 50g). This taste super good but didn't rise. Also I did half whole wheat and half white flour. The one without added sugar rose better. Maybe less water? Or did I somehow add oat milk to this as I made bread pudding? Who knows...

Sauteed onion, add potato, carrot, cabbage and boil 20 m
Vegan corned beef
Mix jackfruit with bay seasoning, allspice, smoked paprika, ginger powder, garlic powder, coriander seeds, cumin. Microwave until hot. Don’t add too much spice.
2026-03-15. Don't overthink the corned beef. I did it with tempeh. Just threw spices and tempeh into a bowl with some olive oil and mixed with my hands. Air fried for 10m on 375 or something. I think it was in the oven with the soda bread. Was good and shouldn't take more than 5m.
