Posole

2 tablespoons olive oil

1 large onion (yellow, white, or sweet), sliced

3 cloves garlic, minced

3/4 cup sliced carrots

3/4 cup sliced celery

6 cups water

1 cube frozen tomato (1/2 cup tomato sauce)

1 can hominy, rinsed

1 can black beans, rinsed

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp oregano

1/2 tsp smoked paprika 

2 tsp cumin

1-2 tsp salt

Instructions 

In olive oil, sauté onion until soft, garlic until fragrant, carrot and celery until fragrant. Add water, tomato sauce, hominy, beans, and spices. Boil 10-15m  

Serve topped with avocado and raw cabbage with warm tortillas on the side.
