Lemon curd

½ cup white sugar

1 tablespoon cornstarch

½ cup water 

30g almonds

¼ cup fresh lemon juice (about 2 lemons)

 

Blend in blender until smooth. Heat in microwave until it boils / expands (about 1 minute).
