Vegan chocolate chip cookies
Ingredients
- 120g (1 cup) all-purpose flour (can also use almond meal, recipe also says oat or spelt. but I haven't tried that)
- 1/2 tsp baking soda
- A couple shakes of salt
- 50g (1/4 cup) granulated sugar
- 50g (1/4 cup) brown sugar
- 30g (2 tbsp) oat milk
- 30g (2 tbsp) coconut oil, melted
- 1/4 tsp pure vanilla extract
- 50g (about less than 1/4 cup) TJ 72% dark or other vegan chocolate chips
Directions
- Preheat oven to 325. (Toaster oven may not be accurate enough, which can affect how well they turn out.)
- Combine flour, baking soda, salt, and both sugars in a bowl and mix quickly with a spoon.
- Add all other ingredients and except chocolate chips. (It's just easier to get it to mix without the chocolate.) It might seem like it's too dry at first and then too soft after mixing, but that's normal!
- Make small (1-in diameter) balls of dough with about 3 chocolate chips in each ball. A batch should make about 18 balls. Put balls on cookie sheet and flatten so they are flat circles.
- Bake 11 minutes on the center rack. They’ll look underdone when you take them out. Let them cool on the baking tray 10 minutes before touching, during which time they will firm up.

255g (2 cups + 1 tbsp) all purpose unbleached flour
1 ½ tsp baking powder
½ tsp baking soda
pinch salt
119g (½ cup) room temperature coconut oil (semi-soft and scoopable)
175 g (¾ cup + 2 tbsp) granulated sugar
80g (⅓ cup) water
½ tsp pure vanilla extract
Bake for 8-10m at 325
