Made with pureed spinach,red curry paste, coconut milk, parsnips, yams. Was ok. 


Ingredients

1 cup (198 g) cooked brown lentils

2 medium eggplants* or 3 yellow summer squash


1 tsp (5 mL) olive oil

1 medium onion, diced

1 cup (400 g) pureed tomatoes

3 cloves garlic, minced

2 tsp (6 g) ground cumin

1 tsp (4 g) ground coriander

1 tsp (3 g) ground cinnamon

1 tsp gram masala

1 red bell pepper, finely diced 

¼ cup (32 g) dried apricots, diced

½ tsp salt

¼ tsp ground black pepper
