Sushi bake



Sushi bowls

Option to try: cucumber sushi sticks

Necessary ingredients

Sushi rice (see recipe below)
Seaweed strips
1/4 tsp. sesame seeds per bowl

Vegetable ingredients (at least 3)

Avocado cubes (1cm)
Carrot (either strips made with vegetable peeler, or shreds or slices boiled until soft)
Green onions
Cucumber cubes
Red bell pepper pieces
Asparagus

Protein ingredients (at least 1)

Ginger-soy lima beans (see recipe below)
Teriyaki lentils (see recipe below)

Directions

  1. Make sushi rice (see below). This is best made ahead of time since the rice requires chilling to make it cold.
  2. Prepare one of the protein ingredients (see below).
  3. Prepare any of the three vegetable ingredients (slicing and/or cooking to soften if desired).
  4. For each bowl, put one cup sushi rice, and top with servings of each vegetable and protein ingredient.
  5. Top with 1/4 tsp. sesame seeds and two crumbled sheets seaweed.

Sushi rice

Ingredients

1 cup rice
2 cups water
1 tbsp white sugar
1 tsp salt
2 tbsp rice vinegar

Prep ahead of time

Make this entire recipe in advance since sushi rice is usually preferred cold.

Directions


  1. Rinse white rice
  2. Put rinsed rice and 2 cups water in a saucepan. Bring to a boil, and then simmer 10 minutes.
  3. As soon as water is absorbed (i.e. after 10 minutes simmering), mix sugar, salt, and rice vinegar into the rice.
  4. If desired, place in refrigerator until cool.

Ginger-soy lima beans

Ingredients

1/2 bag (8 oz.) frozen lima beans
1 tsp. ground ginger
1 tsp. soy sauce
1 tbsp. olive oil

Prep ahead of time

This recipe is best to make just before eating

Directions

  1. Add 1 tbsp. olive oil and lima beans to cast iron skillet.
  2. Cook over medium heat, stirring often, until lima beans are crispy on both sides.
  3. Just before lima beans seem done, add ginger and soy sauce.

Teriyaki lentils

Ingredients

2 tbsp soy sauce
1/2 tsp (or one ketchup packet)
1 tbsp garlic powder
1.5 tsp sugar
1/2 cup lentils
1 cup water

Prep ahead of time

Teriyaki sauce (first four ingredients) can be mixed together ahead of time 

Directions

  1. Rinse lentils
  2. Add rinsed lentils and water to saucepan. Bring to a boil and then simmer 10 minutes.
  3. As soon as water is absorbed (i.e. after 10 minutes simmering), mix in soy sauce, ketchup, garlic powder, and sugar.
