Red (tomato) enchilada sauce

1 onion finely chopped
1 tbsp olive oil
4-5 roma tomatoes (1 lb?), finely chopped
1 tsp cumin
1 tbsp lime juice
1 garlic clove, minced

Saute onion in olive oil until soft
Add chopped tomatoes and simmer 30 minutes, stirring occasionally
Add other ingredients and simmer a couple more minutes
