huajiao fry (green beans, lotus root, etc.)
stir fry
- 1/4 teaspoon ground huajiao pepper
- 5 or 6 dried red chillis
- 1 tablespoon minced garlic
- 1 teaspoon minced or grated ginger
- 3 scallions, white parts chopped
- 2 tablespoons Sichuan preserved vegetable (optional), finely chopped
- 1/2 cup peanut or vegetable oil
- 1/2 tablespoon Chinese rice wine or dry sherry
- 1/2 tablespoon chili bean sauce
- 1/2 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon salt, plus more to taste
