- Saute two small or one medium onion until translucent
- Add 1 lb frozen spinach and saute until defrosted and well-mixed
- Add 1/2 - 1 cup feta cheese (nonfat worked fine!)
- Mix in ~2 tbsp. lemon pepper
- Grease 8x8ish pan
- Place 5 sheets phyllo dough, sized for pan, on bottom
- Layer in half the spinach mixture
- Place 5 sheets phyllo dough on spinach mixture
- Layer in rest of spinach mixture
- Place 5 sheets phyllo dough on top
- Bake for 20-30 minutes (until top layer is brown)
Serve hot with greek yogurt and a handful of cherry tomatoes
