Spinach, Feta, and Phyllo Pie

  1. Saute two small or one medium onion until translucent
  2. Add 1 lb frozen spinach and saute until defrosted and well-mixed
  3. Add 1/2 - 1 cup feta cheese (nonfat worked fine!)
  4. Mix in ~2 tbsp. lemon pepper
  5. Grease 8x8ish pan
  6. Place 5 sheets phyllo dough, sized for pan, on bottom
  7. Layer in half the spinach mixture
  8. Place 5 sheets phyllo dough on spinach mixture
  9. Layer in rest of spinach mixture
  10. Place 5 sheets phyllo dough on top
  11. Bake for 20-30 minutes (until top layer is brown)
Serve hot with greek yogurt and a handful of cherry tomatoes
